Protein Packed Slow Cooker Chili

This is one of my favorite recipes. It’s so simple and delicious. Please enjoy!

2 lb lean ground beef or ground turkey
1 large onion, chopped (1 cup)
1 red bell pepper, chopped (1/2 cup)
2 cloves of garlic, finely chopped
1 can Muir Glen fire roasted tomatoes, diced & undrained, 28 oz
1 can Muir Glen fire roasted tomatoes, 15 oz
2 tbsp chili powder
1 1/2 tsp ground cumin
1/2 tsp sea salt
1/2 tsp pepper
1 can chili beans (rinsed and drained)
1 can kidney beans (rinsed and drained)
1 cup butternut squash puree

1. Brown beef/turkey
2. Stir in all ingredients in a slow cooker and cook for 8 hours. The longer it cooks the better it tastes.

For a little indulgence top with a dollup of non-fat plain greek yogurt. Tastes just like sour cream except less calories and full of protein. Yum!
