This recipe is definitely a favorite in my house. We make it in a bowl and it’s delicious and full of protein!
1 lb. ground turkey
2 tbsp. taco seasoning (recipe here)
1 tbsp chopped garlic
1 small white onion diced
1 can of black beans rinsed and drained
2 tbsp of salsa
Mexican Quinoa (recipe below)
1 tbsp of fat free plain greek yogurt
Brown turkey with onion and garlic in skillet and drain off fat. Add taco seasoning, a little water, black beans and salsa. Cook on low-med for about 10 minutes. Stirring occasionally.
1 tsp olive oil
1 small white onion chopped
1 tsp garlic chopped
3/4 cup uncooked quinoa (rinsed)
1 1/2 cups chicken broth
1 tsp cumin
1/4 tsp cayenne pepper
salt and pepper to taste
Heat oil in a medium sauce pan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with the broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer for 20 minutes.
Scoop 1/2 cup of mexican quinoa and put in a bowl and top with 4 oz of taco turkey meat and a dollup of greek yogurt and avocado and enjoy!
