Recipe: Quinoa Salad

This recipe is easy and super yummy and I love it. Enjoy!

1 cup quinoa, rinsed well
1 1/4 cups of broth (vegetable or chicken)
1/2 tsp salt
1 cucumber diced
1 medium white onion
1 pint grape tomatoes

Dressing:

2 tbsps lime juice
1/2 cup EVOO
1 clove garlic minced

Bring quinoa, 1/2 tsp. salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

Meanwhile, whisk lime juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.

Let quinoa cool in refrigerator. Once cooled, transfer to a large mixing bowl and mix together quinoa, cucumbers, onions, tomatoes and dressing and stir up well.
