This is a recent fave in our house. It reminds me a little bit like steel cut oats but I think I like the quinoa better. Enjoy!
1/2 cup dry quinoa
1 up water
pinch of salt
1/2 cup canned coconut milk
1 to 2 tsps unfiltered raw honey or agave syrup
3/4 cup mixed fresh berries
1 tbsp slivered almonds
Rinse quinoa and place with water and salt in medium sauce pan. Bring to a boil, then reduce heat to low and boil gently for 15 minutes, or until water is absorbed.
Remove from heat, add coconut milk and mix well. (I do this while it’s still on burner so it can soak it up and not be so liquidy)
Place in serving bowl, top with honey, berries and pumpkin seeds.
